The photos here define the word, “progress”. Capturing the progression of farm to jar on film is always a fascinating thing, especially when it starts with two friends in a small apartment on Manhattan’s UWS and makes it’s way to a large-scale production facility.
Looking back, countless hours of prep, weighing ingredients to .008 oz. and measuring PH levels to get the products exactly where we wanted was going to require some equipment you don’t normally find laying around the house. So to all you home canners, expect to turn your humble kitchens into mini laboratories should you ever want to bring your creations to market. Also, note that your bathtub, lined with garbage bags and ice can hold over 200 lbs. of Kirby Cucumbers!
