For a power snack like this, I prefer using a bread that’s naturally high in fiber and easy to digest. Ezekiel 4:9, made from sprouted whole grains is a great choice, its flourless, organic, rich in protein, vitamins and minerals. You can find it at your local Trader Joe’s.

I always make a sandwich like this before my long runs on the weekends (12 miles +). Perfect for sustained energy and an easy recovery. To switch things up, you can substitute salmon or crab meat.

Maple Chili Tuna Salad
Serves 2-3
Ingredients:
¾ cup Donovan’s Cellar Maple Chili Relish
2 5 ounce cans Albacore solid white tuna in water, drained
2 tablespoons Smart Balance Mayonnaise
1 tablespoon DC relish brine
1 rib celery, chopped
1 beefsteak tomato, sliced
1 bunch bibb lettuce
1 small garlic clove, minced
¼ red onion, chopped
1 loaf Ezekiel 4:9 prouted whole grain bread
salt
Coarsely ground fresh pepper
Instructions:
Add tuna to a mixing bowl and using a fork, break into large chunks. Add the onions, garlic, celery, brine and mayonnaise, mix well. Fold in the relish, season with salt and pepper to taste. Add more brine if too dry.
To serve, divide between 3 slices of bread, add lettuce and sliced tomato, and top with a second slice of bread.
