One thing we focus on in all of our products at Donovan’s Cellar is texture, as a great brine can only get you so far. After looking at other pickled beets in the market, we were convinced that this crucial step is commonly overlooked, and there’s nothing worse than a mushy beet. Agreed?
During the test runs, I’ll never forget the surprised look on the face of the production manager at Farm to Table Co-Packers, when Chef Francis told him how long to boil the perfect beets. Chef was adamant in getting this point across and it shows in our products.
My favorite part of the video is Chef taking his pairing knife and testing the texture of the beet. It’s like watching the show, Dexter. So be patient, my friends – 40 to 50 minutes should be sufficient to achieve the perfect beet for pickling.
